Bake: Honey Chicken with Coriander and Cumin seeds | September 24, 2011

Hi all!!! Okay I’ve promised to share this recipe with you. It’s very easy to prepare once you have all the ingredients ready. Tasty honey baked chicken with an Asian twist – that is the addition of cumin with Italian herbs.

Ingredients

1 kg chicken parts (wings, mid-joints or drumlets)
100 ml of honey
3 tablespoons olive oil
2 tablespoons coriander and cumin seeds, fried dry and blended coarsly
3 tablespoons turmeric powder
Italian herbs (Masterfood’s)
3 garlic, crushed
Pepper (to taste)
Salt (to taste)

1. Preheat the oven at 180 deg C.

2. Pour the honey in a mixing bowl, add olive oil, crushed garlic, blended herbs, turmeric powder, Italian herbs, pepper and salt. Mix these ingredients well. (You may wish to add more honey or pepper or salt, depending on your taste buds.)

3. Add in the chicken parts and ensure that you coat every single one of them. (try massaging the chicken..haha! Slather them good with this gooey mixture!) Let the chicken marinate for about 30 mins.

4. Finally, arrange them in a tray and bake for 50 mins (40 mins if you want them to be less crispy).

When you take the chicken out from the oven, they will be glossy and dark brown – that is because the honey has caramelized.

The coriander and cumin seeds are meant to be coarse so that you can taste the burst of the flavours of these herbs when you bite into your chicken. And the aroma is so tantalizing! I love my chicken slightly burnt, with crispy skin but juicy, juicy meat! Happy trying!
